The Verdict

Why Maíz de la Vida Earns the Title

Most Mexican restaurants start with store-bought tortillas. Maíz de la Vida starts with the corn itself. The kitchen imports heirloom corn from Mexico and nixtamalizes it the ancestral way, cooking and grinding it into fresh masa that’s pressed into tortillas every day. You can taste the difference in the very first bite.

Built on that foundation is a menu that honors tradition with a little Tennessee flavor: slow-braised birria with rich consommé, deep and complex moles, and inventive plates like nixtamal grits scooped up with a crisp tostada. Add an agave-focused bar, a dining room filled with murals and Mexican ceramics, and national recognition from the James Beard Foundation, and the choice was easy.

The Story

From a Stone Mill to The Gulch

Chef Julio Hernandez grew up in Tlaxcala, Mexico, where his family harvested maize. After sharpening his skills in French kitchens, he realized the tortillas in Nashville never tasted like the ones he remembered. The difference was the corn.

In 2020, he started Maíz de la Vida with 200 pounds of dried heirloom corn and a stone mill, delivering homemade tortillas across town. Farmers markets and pop-ups led to a lime-green taco truck outside Chopper in East Nashville, a tortilla shop in Bordeaux, and finally the restaurant in The Gulch. Along the way came a feature on Netflix’s Somebody Feed Phil and James Beard Award semifinalist honors in 2023 and 2025.

“Sin maíz, no hay país.”
Without corn, there is no country.
